In the heart of the Po Delta, where the fresh waters of the great river meet the salty Adriatic, an excellent product is born: the Cozza di Scardovari PDO mussel. It is the only Italian mussel with a protected designation of origin. This mollusc holds the history, tradition and uniqueness of a one-of-a-kind territory.
A unique territory in the world
The Cozza di Scardovari PDO mussel is born exclusively in the Sacca di Scardovari. This is a vast body of water between the mouths of the Po di Gnocca and the Po delle Tolle, in the heart of the Po Delta UNESCO Biosphere Reserve. This lagoon environment is a unique ecosystem. Here, fresh and salt water mix, creating ideal conditions for growing top-quality molluscs.
The specific hydrogeological composition of the Sacca, with its low salinity, gives the mussel meat unique characteristics. It brings sweetness, juiciness, softness and a characteristically low sodium content, under 210 mg per 100 grams. This exact mix of fresh and salt water gives the PDO mussel its unmistakable flavour.
The ideal environment for excellence
The Sacca di Scardovari is not just a natural environment. It is an open-air laboratory where nature and people have worked together for generations. The clean waters, ideal microclimate and specific hydrogeological structure make this place perfect for mussels, clams and oysters. This creates a top-quality production ecosystem recognised internationally.

A tradition passed down
Behind every Cozza di Scardovari PDO mussel is the story of a fishing community in the Polesine. Here, know-how is passed down through generations. The farming of this mollusc uses traditional techniques. These respect natural cycles and guarantee the highest quality of the final product.
The Cozza di Scardovari PDO mussel is the only native Italian mussel farmed from local seed, always from the native Italian mussel Mytilus galloprovincialis. The production cycle starts with seed selection. This must be between 1 and 3 centimetres. It continues with a natural growth process until it reaches the commercial size of at least 5 centimetres.
The historic "Cavàne"
A key element of the production tradition are the "Cavàne". These are historic wooden houses suspended over the water like stilt houses. They shape the iconic outline of the Sacca di Scardovari lagoon landscape. This is where the manual processing happens. The product is carefully shelled and graded. This keeps alive the traditional techniques that guarantee the high quality of this unique product.

The PDO recognition: certified excellence
In 2013, after a long process of promotion and protection, the Cozza di Scardovari obtained the PDO (Protected Designation of Origin) recognition. It became the first and only Italian mussel with this European certification. This milestone is a recognition of the product's high quality. It is also a guarantee for consumers and a protection for the territory and its traditions.
The Protection Consortium of the Cozza di Scardovari PDO mussel, established in 2016, strictly monitors compliance with the production rules. These define every aspect of the production chain precisely. This includes the geographical area of origin, farming methods, required characteristics, packaging and marketing.
Certified characteristics of excellence
The Cozza di Scardovari PDO mussel stands out for precise and certified physical and organoleptic characteristics:
- Shiny meat that fills the shell cavity well
- Meat percentage representing at least 25% of the total weight of the mollusc
- Specific sweetness of the meat due to the low sodium content
- Soft and melting texture with high palatability
- Elongated shape with a black-purple shell
